Pumpkin Cookies

Another yummy pumpkin recipe......these were super easy to make and the kids really liked them.  I was debating between these and pumpkin whoopie pies (our time was a bit limited with everything else we were doing, so we may have to make the whoopie pies next week or pumpkin bars or pumpkin roll or......there are so many yummy recipes it's so hard to decide.....may have to see what the kids want to make).

Sugar
Oil
Flour
Baking Powder
Cinnamon

Pumpkin Chocolate Chip Cookies

1 cup cooked pumpkin
1 cup sugar
1/2 cup oil
1 egg
2 cups flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 tsp baking soda dissolved in 1 tsp mlk
1 cup semisweet chocolate pieces
1/2 cup chopped nuts (optional)
1 tsp vanilla

Combine pumpkin, sugar, oil and egg.  Stir together flour baking powder, cinnamon and salt; add to pumpkin mixture along with dissolved soda.  Mix well.  Stir in chocolate, nuts and vanilla.
Drop by teaspoonfuls on lightly greased cookie sheet.  Bake in preheated 375 degree oven for 10-12 minutes.
Makes about 5 dozen.
