Pumpkin Cupcakes

I have seen this recipe all over Pinterest......2 ingredients for cake or cupcakes.
All you need is a can of pumpkin (15 oz......I had a large can, so used about half) and a cake mix.....spice cake was recommended, so we thought we would give it a try.
 
Just dump the 2 ingredients together and stir!







The girls wanted to help put the batter in the cups.



Bake at 350 degrees for about 15 minutes.

Then frost.

And enjoy!

All the children LOVED them (my boys left with their Nana, so they enjoyed theirs at the park).  And I have to say, they were AMAZING!!!
 
I read about different cake mixes and if you are wanting more of a pumpkin taste, go with the spice cake......the chocolate didn't taste like pumpkin, but said was really moist and still very good.  Just depends if you are wanting a pumpkin taste or not.  Will definitely be trying this with other cake mixes.....they were on sale last week, so I stocked up!
 
 
Here is the recipe for the frosting we used......the recipe came from Lena Kleiner.
 
Beat 1 package of cheesecake instant pudding mix with 1 cup cold milk and 1/2 cup powdered sugar for 2 minutes with your mixer.  Then gently fold in 1 container of cool whip.  Put it in the freezer for a bit to make it stiffer.  Frost your cupcakes and eat.....make sure you store the cupcakes in the fridge as they will melt.
