Pumpkin Roll Bars

We made another yummy pumpkin recipe yesterday.  It is supposed to taste like pumpkin roll without all the work.

In a bowl, beat together 6 tablespoons melted butter and 1 1/2 cups sugar until smooth.  Beat in 2 eggs, 1 (15 oz.) can pumpkin, 1 teaspoon vanilla and 1/4 cup water until well blended.



 
In a separate bowl mix 2 cups flour, 2 teaspoons cinnamon, 1/2 teaspoon ground cloves, 1/2 teaspoon ground ginger, 1/2 teaspoon ground nutmeg, 1 teaspoon baking soda, 1/2 teaspoon baking powder and 1/4 teaspoon salt.


Add the dry ingredients to the pumpkin mixture and combine until well blended.


In a bowl, beat 8 ounces cream cheese (softened), 1 egg, 1/4 cup sugar, and 1/2 teaspoon vanilla until smooth.





Pour 2/3 of the pumpkin batter in a greased 9x13 pan, then spread cream cheese mixture on top and dollop the remaining pumpkin batter and spread as best you can on top.  Then take a table knife and swirl the cream cheese and top layer of pumpkin together.

Bake for 30-35 minutes at 350 degrees.

Cool completely (if you can) and cut into bars.




 They ALL thought it was very good.  It was pretty good, but I don't think it was exactly like Pumpkin Roll.....it had the cream cheese mixture with the pumpkin, but I think it needed more of the cream cheese mixture.  I may try this recipe again and double the cream cheese mixture, I think that would help.  Way easier than pumpkin roll though and the kids loved it!
